The Green Bean Army (GBA) was formed to “Fight fast food, fight fatty foods and fight flab. The GBA promotes good food and healthy living, by arming itself with “healthy recipes”.
Sorry to disappoint the “real” admirals and generals of ‘The Bolehland Armed Forces’, who claim I am “power-mad” because I am the “Admiral-General of the GBA”. They are overworked and have lost their sense of humour.
The worst thing that could happen to the Malaysian food culture is the Mamak shop. Shut it down, because the food is unhealthy, and you will cause a riot. If your child is missing from home, late at night, chances are he can be found lepakking at the mamak shop. The 24-hour Mamak shop, encourages teenagers to sleep late, and play truant, the following day. Shift workers find Mamak shops convenient but health conscious people find them terrible.
GREEN BEAN DESSERT
Preparation time: 10 minutes. Cooking time: 1 hour
250 g palm sugar or white sugar if you can’t find palm sugar
250 ml (1cup) coconut milk
250 ml water
250 gm mung beans
1 screwpine (pandan leaf) or a few drops of pandan essence
pinch of salt
Method:
Break up the palm sugar into small pieces. Put into a large pot with the water and washed green beans and boil for 30 minutes. Add coconut milk and screwpine leaf or essence, then simmer for another 20 minutes, till the beans are soft and the liquid is reduced. Add more coconut milk if desired. Serve hot or cold.
